Refactor build workflow and Dockerfile for efficiency 
Replaces ./gradlew with gradle CLI in CI steps, skips Spotless checks during builds, updates Docker Compose version, and improves multi-arch Docker build/test logic. Dockerfile.fat now uses Alpine 3.20, installs LibreOffice via apk, simplifies package installation, and streamlines environment setup for better maintainability and faster builds.
